"The Study Of...” culinary series features an in-depth exploration of ingredients with the chefs of the Destination Culinary Collection. Each quarter, a new gastronomic topic is unveiled for our chefs to examine through cooking demonstrations, educational lectures, innovative recipes or sumptuous tastings.
This quarter, we are present “The Study of Salmon” – a fitting topic for those of us that live in the Pacific Northwest, where salmon is abundant. Join us as we celebrate the ingredients that allow us to create brilliant dishes to delight and inspire.
A little Salmon history…
Salmon live along the coasts of both the North Atlantic and Pacific and are known as the "king of fish," an appropriate title for many reasons. Salmon make a tremendous journey during their lifetime, migrating from the fresh water streams of their youth to feeding grounds in the Atlantic or Pacific Ocean and back again to spawn. Their capacity to return back to the same stream where they were hatched has captivated and mystified biologists for hundreds of years.
The name "salmon" derives from the Latin salmo, which in turn may have originated from salire, meaning "to leap" hence the classic image of salmon “leaping” through the air on their way to spawn.

Grilling salmon can be tricky. Make sure your grill grates are very hot and very clean. Dry the fish fillets and season with salt and pepper. Brush a small amount of olive oil on thefillets and gently place the fish on the hot grill. Let the fish grill for 3 to 5 minutes, then using your fingers gently “lift” at the corners of the fillet. Once you have released thefillet from the grill without sticking, flip over using a spatula and grill for an additional 3 to 5 minutes.
