“The Study Of” culinary series features an in-depth exploration of our favorite ingredients with recipes and drink pairings that will create an exceptional meal. Sonoma county winemakers, Don & Sons, have partnered with the Destination Culinary Collection to share their wine pairing recommendations for the current featured ingredient - salmon.
Salmon pairs exceptionally well with a medium-body Chardonnay. Don & Sons’ ‘Sonoma Signature’ Chardonnay 2010 has a touch of French Oak and creamy notes to add a nice texture and complexity to the wine. This Chardonnay, meant to savor, comes from Sonoma, California where early morning crisp coolness and a blanket of fog, followed by late morning sun, then a mid-afternoon cooling sea breeze that gives way to the nightly return of fog, becomes the perfect recipe for a well-balanced wine.
