The Study of Salmon Wine Pairing: Pinot Noirphoto

Sonoma county winemakers, Don & Sons, have partnered with Destination Hotels & Resorts’ Culinary Collection to bring you “The Study Of Salmon.”  The “Study Of…” culinary series celebrates the ingredients that allow us to create brilliant dishes to delight and inspire. Of course, no great meal is complete without the perfect wine pairing and a salmon dish is no different. Since salmon is a pink fish it pairs well with both white and red wines.

Try out our chef recipe for Salmon Belly Tartar or House Cured Salmon, then pair with a nice Don & Sons 2011 “Sonoma Signature’ Pinot Noir. Aromas of strawberry, raspberry and cranberry dusted with subtle notes of dark chocolate, purple basil and walnuts invite you in. This silky, medium-bodied wine leads with vibrant favors of red raspberry and pomegranate with wonderful earthy undertones, finishing with hints of cedar. The flavors and aromas make it a perfect marriage with grilled salmon.
