James Boheim, Executive Chef has shared a wonderful winter recipe. Enjoy!
Winter Spinach Salad Recipe:
- 8 oz baby spinach
- 1 apple
- 1 pear
- 1 cup white wine
- ½ white onion
- 1 lemon cut in half in water
- 4 oz dried cranberries
- 4 oz walnuts
- 1 red onion
- 1 oz fresh thyme
- 1 cup salad oil
- 2 oz apple cider vinegar
-Peel apple and pear, cut both in half
-Use half of pear, apple, remove seeds and small dice, let sit in lemon water.
-Using other half pear, apple remove seeds, add to small pot, with white onion and wine
-Bring to boil, let cool, and blend until smooth.
-Add, vinager, oil , thyme, and blend, reserve for salad dressing
-Slice the red onion, add to a sheet pan with diced apples and pears, and roast in oven 30 min 350 degrees
-Large bowl add baby spinach, roasted onion apple, pears, and dried berries
-Add dressing and toss
-Add walnuts to top and ready to eat
