SKAMANIA LODGE COOKS WITH KIDS
Lodge partners with local high school to prepare students for culinary careers
This year, 45 students are participating in the Cooking With Kids program, an hour-long daily class that runs for a full school year. Each month, members of Skamania Lodge’s culinary team work with area students to teach them new skills ranging from proper cooking techniques to providing hands-on educational opportunities related to the day-to-day operations of a restaurant. The program has already seen success with three students hired to work weekends at Skamania Lodge this year.
On June 8, each student will work in an assigned position to mimic experience in a working restaurant. The staff will include a chef, dining room manager, host, garde manger, pastry chef, sous chef, and line cooks. Students will spend the days prior to the dinner preparing the dishes for the evening. On Tuesday, the class will make compound herb butter and pipes rosette. Wednesday the class will make antipasti salad, Thursday the class will make tiramisu, and Friday, prior to dinner service, the class will prepare chicken.
The full dinner menu will include delectable dishes, all student-made:
- Chicken parmesan
- Spaghetti pasta with made-from-scratch marinara sauce
- Antipasti salad
- Herbed focaccia
- Tiramisu
- Lemonade and water
Tickets to attend the dinner are $10 each and guests must purchase them from Stevenson High School in advance to secure reservations. Students are hoping to have at least 100 guests attend. For more information about Skamania Lodge, call (866) 399-7980 or visit www.skamania.com.
